Quick Kale Chips

Here’s a wonderful tasty recipe to easily eat one bunch of kale in a day! It goes great with the Candied Pecans, and you have a complete meal with both!

I don’t discard the stems, I actually blend them up, with some olive oil and lemon and a smidgen of water and pour them out pancake style on a teflex sheet. I pour potato chip size, and I sprinkle a bit of Himalayan or Celtic salt onto them! I use the tamper with my Vitmix, and this is one reason why I like it over the Blendtec blender.  For more information on getting your own Vitamix blender, go HERE! I have a Vita Prep 3, but I like the 5200 series. It’s lower cost than the Prep 3 and it does the same great job. And of course they both come with a tamper and that makes using the stems like this possible.  The Blendtec falls short on this.  More Vitamix info HERE!

I don’t use nutritional yeast, due to the Anti-Candida Diet guidelines, but I do use Ann Wigmore’s Rejuvelac instead and it works great!

Here’s a quick recipe for your winter greens, thank you to reader Patricia who gives raw food classes at her local Senior Citizens Center.

– One bunch kale, washed, dried, de-stemmed, leaves torn into 2-4 inch pieces
– Juice of half lemon whisked into a quarter cup of olive oil (less oil can be used, fill the 1/4 measuring cup half full of water first, then add oil)

Place kale into large mixing bowl. Massage 1 tablespoon oil-lemon mix into kale. Massage vigorously, adding oil/water combo, one splash at a time until each piece of kale is shiny.

Spread on cookie tray or teflex dehydrator tray. Sprinkle lightly with a natural salt OR use nutritional yeast flakes (massage in flakes before spreading on tray). Dehydrate for 2-3 hours. Eat immediately. Melt in your mouth crispy.
